I have been lusting over this coconut cake by Casey from Moosh in Indy for a good 4-years. (I keep telling her if she REALLY loved me she would fly to Utah from Indiana and make one for me.) (It has not happened yet.) (I think she’s just playing hard to get.). It sound like such an unbelievable pain in the heiny to make (Before frosting them she sprays the layers with homemade coconut water, people!) but also soooooooo amazing and good (Again, she sprays the layers with homemade coconut water, people!) that I drool simply reading it. ONE DAY YOU SHALL BE MINE, CASEY’S COCONUT CAKE!!
What can I say? I am a sucker for a good bundt cake. (I think this really MIGHT be the best blueberry cake ever. NOM!)
