Recipe: Whoopie Pies

Christen shares her recipe for the ‘must make’ on everyone’s list-Homemade Whoopie Pies.

It seems like Whoopie Pies have been showing up just about everywhere these days. I’m not sad about that, because they’re adorable. The second I saw them, I knew I had to make some. I was pleasantly surprised to find that they’re simple to make, and delicious too! The following recipe is what I used (if you’re afraid of making your own cake mix, you can easily use a box mix), but if you search online, there are a ton of different variations. I think next I’ll try making some red velvet Whoopie Pies!

Whoopie Pies

  • CAKE
  • 6 tablespoons butter, softened
  • 1 cup white sugar
  • 1 egg
  • 2 cups all-purpose flour
  • 5 tablespoons unsweetened cocoa powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • 2 (8 ounce) packages cream cheese, softened
  • 1/2 cup butter, softened
  • 2 cups sifted confectioners’ sugar
  • 1 teaspoon vanilla extract

  1. Preheat oven to 375 degrees F (190 degrees C).
  2. TO MAKE COOKIES: cream 6 Tablespoons butter, sugar and egg in bowl.In a separate bowl, mix together flour, cocoa, baking soda, and salt. Add to butter mixture with milk and vanilla, mixing well after each addition. Drop by teaspoonfuls onto cookie sheets. Bake for 10 to 12 minutes. Remove to wire rack to cook completely.
  3. TO MAKE FILLING: cream together the cream cheese and butter until creamy. Mix in the vanilla, then gradually stir in the confectioners’ sugar. Store in the refrigerator after use. Place a large dollop of the filling on the flat side of one of the cookies, place another cookie on top. Continue doing so until you’ve filled all the cookies.
