Marinated Tomatoes


  • Tomatoes
  • Red Wine Vinegar
  • Olive Oil
  • Sugar
  • Chopped Garlic
  • Minced Fresh Thyme
  • Minced Fresh Parsley
  • Chopped Green Onions
  • Salt
  • Freshly Ground Pepper


  1. In a large bowl, combine red (and yellow, if available) tomato wedges. Make a dressing of red wine vinegar, olive oil, sugar, chopped garlic, minced fresh thyme, minced fresh parsley, chopped green onions, salt, and freshly ground pepper. Use whatever quantities you’d like in order to make the dressing uniquely yours! Pour dressing over tomato wedges and marinate for at least 2 hours or overnight.
