Spiced Carrot Muffins

Muffins are a great breakfast, snack, or even dessert if you make the right muffin.  This spiced carrot muffins recipe arrives just in time for Easter.  Make them the night before as a treat for the Easter Bunny or a quick breakfast before your busy day of events.

These spiced carrot muffins are moist, full of flavor, and a great way to start your day. They are also a perfect treat for Easter.

Serves: 12
  • 1¾ cups all-purpose flour
  • ¾ cup white sugar
  • 1 tsp. cinnamon
  • ½ tsp. allspice
  • ½ tsp. nutmeg
  • ½ tsp. ground ginger
  • ½ tsp. salt
  • 2 tsp. baking powder
  • 1 tsp. baking soda
  • 4 TB. unsalted butter, melted
  • ¾ cup plain yogurt
  • 1 large egg
  • 2 cups of shredded carrots
  1. Preheat oven to 375 degrees and line 12 cups of a muffin tin with paper liners.
  2. In a large bowl whisk together all dry ingredients, including sugar, and spices.
  3. In a small bowl beat together butter, yogurt, and egg until smooth. Add to dry ingredients and mix until blended. (batter will be thick) Gently fold in shredded carrots until combined.
  4. Spoon into prepared muffin cups and bake for 25-30 minutes or until toothpick inserted into center of muffin comes out clean.
  5. Cool for 15 minutes in muffin pan and serve.
  6. Store in airtight container once cooled. Perfect served room temperature also.
