Pumpkin Spice Cupcakes Recipe

  • Cupcakes: 1 ½ cups all-purpose flour
  • 1 teaspoon pumpkin pie spice
  • 2 teaspoons instant coffee granules
  • 1 teaspoon baking soda
  • Pinch salt
  • 3/4 cup sugar
  • 3/4 cup brown sugar
  • ¾ cup pumpkin puree
  • 2 large eggs
  • ½ cup vegetable oil
  • 1/2 cup apple juice
  • Frosting: 1 cup unsalted butter, room temperature
  • 2 cups powdered sugar
  • ½ cup pumpkin puree
  • 1 teaspoon instant coffee granules
  • 1 teaspoon pumpkin pie spice
  • 1 teaspoon vanilla extract

Pumpkin Spice Cupcakes Recipe


  1. Cupcakes: Preheat your oven to 350 degrees. Line two muffin tins with paper liners and set aside.
  2. In a small bowl, whisk together the flour, pumpkin pie spice, coffee granules, baking soda, and salt. Set aside.
  3. In the bowl of your electric mixer, combine the sugars, pumpkin, eggs, and oil. Slowly stir in the dry ingredients followed by the apple juice.
  4. Fill each liner 3/4 full. Bake for 15-20 minutes, or until a toothpick comes out clean.
  5. Frosting: Beat the butter with an electric mixer until light and fluffy. Scrape the sides of the bowl, and add the powdered sugar.
  6. Once combined, stir in the pumpkin, coffee granules, spice, and vanilla. Spread onto cooled cupcakes.


Drizzle with chocolate syrup for that extra touch of wow!
