Having kids lend a hand in preparing their own meals

My kids have always eaten (and cleaned up!) better after meals they help cook/assemble. In other words, I completely agree with Sarah! (Plus, the recipe for the dressing she provides sounds delish on a sandwich.)

We just have found that the kids tend to eat better when they have a hand in making it themselves. Whether it’s making their own PB&J or tossing their own salad. Therefore, when we are somewhere where we are planning to have a campfire, we do more than roast smores…though, those are the favorite part! Cooking with pie irons makes it fun for everyone.

Grab some cooked shredded chicken (cook yourself or cheat by buying a rotisserie chicken and shredding) or beef. Put a tortilla in a pie iron fill with your desired meat choice (or make it veggie only), add black beans, corn, jalapenos, green and/or red peppers, onions, and cheese. Wrap it all up in the pie iron and cook over the campfire. When finished top with guacamole and sour cream – delicious! And the kids can make their own so they eat it up.

When going kayaking or canoeing, make this delicious turkey salad as an alternative to PB&J (you can tell we have a lot of PB&Js!). Throw in a bottle of wine, cheese, and crackers and you’ll feel like you’re being pampered. The cold water keeps everything cool and fresh (as long as you’re not out in the hot sun too long!).

Take cubed turkey, cubed jarslberg cheese, and grapes cut in halves. Mix with the following dressing:

1/2 Cup Mayo
1/8 Cup Raspberry Vinegar
3 Tbsp Sugar
White Pepper
Salt
1 Tsp Dijon Mustard
Add a little water to thin out the dressing.

Mix it all together and eat it plain or throw it in a pita for a great sandwich.
