While you may notice signs of Fall creeping in, Summer is still very much alive and gripping us with it’s scorching hands. Sometimes these last weeks are the hardest, hottest, and most treacherous. I’m not one to wish time away- I’m more of a “make lemonade out of lemons” kind of person. However, in this case I’m a make-ice-cream-out-of-canteloupe type of person. Through out the Summer we all have our fair share of fresh fruits. I like to change it up and invent some ways to enjoy the- by now- mundane fruits. Two ingredients, a few moments of prep-time, and an easy process a simple fruit is completely transformed into a sweet and refreshing treat to cool you off and help you survive the last days of Summer.
- 1 small cantaloupe
- ¼ cup sugar
- In a blender combined peeled and seeded cantaloupe and sugar until just smooth, leaving a little bit of texture.
- Transfer mixture to a 9 x 13 baking dish.
- Freeze for two or three hours, then begin the process of lightly scraping the top, frozen layer. Return pan to freezer with the shaved ice on top; remove a couple of hours later and continue scraping.
- Repeat the occasional scraping process until the entire mixture is shaved. Store, covered in plastic wrap, until serving.
