Because I Believe In You
There once was a recipe. It was a lovely little recipe. And how could honey lemon chicken ever not be lovely? Well, this particular recipe was a little blessing in disguise.
A little while ago I was having a “day”. You know what I mean, one of those lonely, kick me while I’m down days. Bleh. I hate those days. Generally I’m a positive person and I love to be able to take care of my friends and family, but this day was a little different. You see, life has been a bit crazy. My husband lost his job a few months back which has been such a roller coaster (let’s just say it involved a dishonest company and court. You can read more here, but you’ll have to click on each part to get caught up), our computer crashed, my site has been having issues, and I’m redesigning- which is so stressful I could cry, my daughter isn’t growing-another story which will appear on Sweet Basil soon-, and bla bla bla to just name a few things.
Anyway, I woke up, and I just knew it was going to be a horrible, no good kind of day. All of my friends have been having babies, and the weight of not being able to have any more had really been eating at me, and most friends happen to be busy right now, so I wasn’t really feeling like I had anyone to lean on. You see how negative the day was? But, don’t worry, it’s all about to change…
First, my husband came home and I told him that I wanted something quick and easy for dinner. No mention of my bad day.
He immediately gave me a big hug, and told me that everything was going to work out, and he’s 100% behind me trying to turn Sweet Basil into a success. I quickly fell apart and replied that I don’t think I can carry all of these burdens and it probably wont become anything.
His reply, “yes you can and yes Sweet Basil will.”
“How? How can you be sure?” I asked
“Because I believe in you”
Ohhhhh. He believes in me. That’s all it took. I was already feeling better. We got started on a delicious recipe. I was thinking of using the lemons and with my trusty side kick, the hubby, we ended up creating the easiest, but most delicious marinade.
And then our friends stopped by. She pulled me aside and told me, “Carrian, I just want to tell you that you are wonderful, and I totally believe in you. Just felt like I should let you know.”
Say what?! How did she know?! The hubby swears he didn’t say anything. She swears she just “felt” impressed to tell me. And do you know what? Dinner turned out amazing, my burden was not removed, but it was made light so that I could carry it, and I felt peace. Real peace. And it all came because of this sentence, “I believe in you”. I’ve been so easy going about blogging, life and trials ever since. I knew how to have faith, I just forgot to have it in myself.
And so I sit here writing this post to let you know that I believe in all of you. And I think it’s high time we believe in each other. Isn’t there some one out there that you could go show a little love or concern for? (Suddenly that song, I Raise You Up is blaring in my mind. lol!) If we have nothing else to give, we can at least give support, love, and concern for another human being. Because guess what? We all have a story. We are all just trying to be the best we can be and make it through this thing called LIFE.
Honey Lemon Grilled Chicken Recipe
Summary: Carrian describes this as life changing chicken. It’s that amazing.
- Zest of 1 lemon
- 1/4 Cup Lemon Juice
- 1/3 Cup Honey
- 1/4-1/3 Cup Fresh Basil, Chiffonade
- 6 Boneless Chicken Thighs
- Whisk together the honey, zest and lemon juice. Reserve a few tablespoons in a separate bowl.
- Place the chicken and marinade in a dish and cover. Refrigerate for 1-6 hours.
- Heat the grill to medium high heat and add the chicken. Cook for 4-6 minutes and flip. Baste with extra marinade and cook an additional 4-6 minutes depending on thickness. Remove from the grill and tent with foil for 3-5 minutes to allow juices to redistribute.
- Sprinkle with fresh basil and enjoy!
