Ingredients
- 1¾ cups all-purpose flour
- ¾ cup white sugar
- 1 tsp. cinnamon
- ½ tsp. allspice
- ½ tsp. nutmeg
- ½ tsp. ground ginger
- ½ tsp. salt
- 2 tsp. baking powder
- 1 tsp. baking soda
- 4 TB. unsalted butter, melted
- ¾ cup plain yogurt
- 1 large egg
- 2 cups of shredded carrots
Instructions
- Preheat oven to 375 degrees and line 12 cups of a muffin tin with paper liners.
- In a large bowl whisk together all dry ingredients, including sugar, and spices.
- In a small bowl beat together butter, yogurt, and egg until smooth. Add to dry ingredients and mix until blended. (batter will be thick) Gently fold in shredded carrots until combined.
- Spoon into prepared muffin cups and bake for 25-30 minutes or until toothpick inserted into center of muffin comes out clean.
- Cool for 15 minutes in muffin pan and serve.
- Store in airtight container once cooled. Perfect served room temperature also.
