Ingredients
- ½ cup butter, softened
- ½ cup sugar
- ⅓ cup light brown sugar
- 2 large eggs, room temperature
- 1½ tsp. baking powder
- ¼ tsp. baking soda
- ½ tsp. ground nutmeg
- ¾ tsp. cinnamon
- ½ tsp. salt
- 2 tsp. vanilla extract
- 2⅔ cups all-purpose flour
- 1 cup buttermilk (can substitute with milk of your choice
- For topping- 3 TB. melted butter
- 3 TB. Sugar mixed with 2 tsp. cinnamon
Instructions
- Preheat oven to 425. Lightly grease muffin tin or line with paper or silicone muffin cups.
- In bowl of stand mixer add sugars and softened butter, mix on medium speed until creamy. Add eggs and vanilla, mix until light and fluffy.
- Slowly add baking powder, baking soda, cinnamon, salt, and nutmeg until well blended.
- Add flour and buttermilk. Mix on low for about 2-3 minutes or until well combined.
- Spoon evenly into muffin pan.
- Bake for 16-18 minutes or until toothpick inserted into middle of muffin comes out clean. Cool on baking rack for 20-30 minutes.
- Brush tops of muffins with melted butter and sprinkle with cinnamon sugar mixture. ENJOY!
