Ingredients
  • ½ cup unsweetened cocoa powder
  • 1 cup water
  • 2 cups sugar
  • ⅛ tsp. salt
  • ¼ tsp. vanilla

Instructions
  1. Combine all ingredients in a medium saucepan and whisk until mostly smooth.
  2. Cook over medium heat stirring frequently until the sugar has dissolved.
  3. Turn heat up to medium-high and bring mixture to a low bowl. Stirring frequently to avoid boiling over. Boil for about 3 minutes or until mixture is smooth.
  4. Remove from heat and allow to cool to room temperature.
  5. Pour syrup into a glass storage jar (using a funnel helps avoid messy spills) and store in fridge. Will keep in fridge for 2-3 months.

  1. I have been making this luscious syrup for years. Try using equal amounts of sugar and a high-quality dark cocoa powder, a dash of cinnamon instead of vanilla and whole milk or half & half instead of water. Cook over medium heat until it starts to thicken - like a syrup - remove from heat and allow to cool a bit. It is a rich, fudgey sauce that is amazingly good over everything: fruit, ice cream, pies, cakes, or licked off a spoon when you really need a taste of chocolate! Keeps a week in the refrigerator and will thicken a bit when cold. If it gets too thick, it is pudding! Yum.
